Northeast Minneapolis is becoming quite the hotspot for vegan dining.
In addition to the vegan butchers at Herbivorous Butcher, Nordeast will soon boast a mostly dairy-free ice cream and crepe shop. Crepe and Spoon, dreamed up by former Sheridan Room manager Rachel Booth, is slated to open sometime in December, reports the Star Tribune.
By swapping out the cream for coconut milk and almond milk in the majority of her treats, Booth plans to offer vegan-friendly scoops in a variety of interesting flavors -- including a non-alcoholic cocktail-inspired line with options like gin & tonic and Old Fashioned.
“Flavors that speak for themselves rather than just the fat content. We want people to feel good about eating it,” Booth told the Star Tribune.
The space has not yet been built out, so gunning for a December opening is an ambitious undertaking. But Booth and her business partner, Michael Beachy, are wisely keeping the concept limited to ice cream and crepes for now.
