The essence of the State Fair is ephemeral. For a brief couple of weeks at the end of summer, the tents go up, the booths are stationed, the animals are trucked in, and the people gather. It adds a bit of now-or-never shimmer to the fact that you’ve got manure on your shoes and you’re sweating like a sinner in church. At the International Bazaar, the Midtown Global Market booth makes that urgency feel even more urgent: Vendors share time, so your favorites might be there one week and gone the next. This explains the winding line leading to the Rabbit Hole’s booth, where the Carpe Diem was a must-see and a must-have. A buttermilk miso cone in the shape of an Asian carp arrived filled with balsamic-roasted strawberry jam and vanilla ice cream, and topped with graham cracker crumble and a strawberry. It was instantly the most Instagrammable food at the fair, and delicious too. What better way to encapsulate the Great Minnesota Get-Together than with an over-the-top dessert that reminds you to seize the day?
