On Kickstarter, you’ll find the outstretched hands of just about every kind of person with every kind of pitch. That’s why it’s really special when something truly unique and wholly worthwhile makes big bucks on the crowdfunding site. Sean Sherman’s Sioux Chef, the indigenous-cuisine restaurant-to-be, is just that. The Sioux Chef aims to revitalize Native American farming techniques, wild-food usage and harvesting, land stewardship, salt and sugar making, hunting and fishing, food preservation, Native American migrational histories, elemental cooking techniques, and Native culture and history in general. The best part is, his work means Minnesota might get a true taste of what our culinary heritage is all about, beyond church-basement hot dish and jiggly lutefisk. That alone has to be worth at least the $148,728 pledged to help bring Sherman’s project to life. Watch for the restaurant sometime this year.
